Double Chocolate Cherry Jumbo Muffins

I am taking a break from the baking this week. In place of fresh goods, I am posting the Double Chocolate Cherry Muffins that I made several weeks ago. I modified the receipe from VWAV. Not by much, I just used some applesauce and added cherries. I got six jumbo muffins. They were very moist and had a nice tartness to them. My two friends in the background are just one pair of many salt and pepper shakers that inhabit my kitchen. Somehow they snuck into the pic. They look like the grandfather from "Grounded for Life." I love that show.

Coconut Oatmeal Raisin Cookie

Sundays are my baking days. I take the whole morning to make a few things to get me through the week. The receip came from here. It originally called for some sort of nuts, but I replaced them with coconut. I also used unbleached, naturally white ap flour, demerarra sugar and half Earth Balance margarine and applesauce. I used two Ener-G "eggs". I was skeptical as to whether or not they would hold together, but they turned out fine; nice and crisp on the outside, and chewy on the inside. I ended up with sixteen large cookies. I mailed ten to a friend (along with a devil-horned hat I knitted for her), and kept the rest. I am under obligation to make more this weekend for my mom. She only got two. And she was...upset.

Rhubarb Pecan Muffins

Okay, ashamedly, this was my first encounter with rhubarb. I have never in my 25 years of life tasted rhubarb, or even thought about rhubarb, until recently. When I happened upon some on Saturday, I decided that I must make muffins. I made the Rhubarb Pecan Muffins from ExtraVeganZa. I must say I was impressed. They were perfectly tart. I used whole wheat pastry flour and agave nectar instead of maple syrup (I didn't have any!). I got twelve muffins, though ten were normal sized, two were on the smallish side.

Formality.

I know the first post is purely a formality. So let's get down to business. I am on a mission: to bake myself into a sugar coma. Making muffins has become an obsession for me. They are sugary devils disguised in crumbly, breakfasty goodness. With fruit. Or veggies. As long as you have one of those two things they can still pass as healthy. That being said, I am off to make some muffins!!
